Cranberry & Pine

At some point during the Christmas festivities, you might be grateful for a long, refreshing drink with subtle notes of some of the lighter flavours of the season, and if you want to skip the gin, this makes for a great alcohol free Christmas cocktail as well.

Two seasonal flavours work well together in this refreshing highball.

Cranberry & Pine

50ml gin
30ml fresh lime juice
15ml pine syrup
dash of bitters
15-20 cranberries
soda water

Muddle the cranberries in the bottom of a cocktail shaker. Add the remaining ingredients (except the soda water) and cubed ice. Shake well and strain into a highball over fresh ice. Top with soda water.

Pine Syrup - Combine equal parts sugar and water and a handful of pine needles and steep for at least two hours. Strain and keep (in the fridge) for up to two weeks.
