West Coast Highball

Inspired by the late summer-blooming heather seen across the western highlands of Scotland, this was adapted from a Salvatore Calabrese recipe and named for a very important wedding (our wedding) on the west coast of Scotland in September 2016.

It has subsequently become a staple of many a Fox & Beagle event, and it is rumoured that the pair won't travel anywhere (especially to Scotland) without a small flask of heather and lavender syrup about their person. Just in case...

West Coast Highball

40ml blended Scotch whisky
10ml Talisker 10 year old
15ml Drambuie
10ml honey syrup (1:1)
25ml fresh lemon juice
1 dash dandelion & burdock bitters
1 dash Hielan' bitters
heather and lavender soda

Shake first seven ingredients with cubed ice. Strain into a chilled highball glass over fresh ice. Top with heather and lavender soda and garnish with a sprig of lavender and some heather flowers.
