Spiced Orange Syrup

An exceptionally easy and exceptionally seasonal syrup with all the smells of Christmas baking and citrus.

It can be used as a straight replacement for simple syrup in all of your favourite cocktail recipes or served with Champagne or sparkling wine to add a touch of festive cheer to a simple glass of fizz.

It can also make an excellent last-minute gift to the cocktail or coffee lover in your life.

Spiced Orange Syrup

makes 500ml
500ml water
500g sugar
4 cinnamon sticks
peel of one orange
a large pinch grated nutmeg
4 tbspn fresh ginger
5 cloves
4 cracked cardamom pods
3 black peppercorns

Combine all ingredients in a pan over a medium heat and simmer for ten minutes. Remove from the heat and steep for one hour. Once cool, strain into a sterile bottle and keep (in the fridge) for up to two weeks.
