Winter Wedding – Beyond Mulled Wine


For this winter wedding in an English stately home, we were asked to create a warming welcome cocktail that looked beyond mulled wine for its inspiration.

The wedding reception was being held in the fifteenth century great hall of a former royal residence, and the antique wooden floor wouldn't stand up to the risk of a rogue red wine stain. Working within the 'no risk of staining' constraints we were inspired by the grand surroundings to consider a suitably medieval recipe with a dash of some festive spices appropriate to the season.

We prepared a range of warming winter punches for a pre-wedding tasting session and worked with the bride and groom to come up with the final recipe.

This could then be pre-batched and heated at the venue before being served to the guests upon arrival.

Naturally, it was so good not a drop was spilt!

Hot Buttered Cyser

20ml applejack
70ml mead
70ml cider
15ml spiced simple syrup
10ml fresh lemon juice
2 dashes Abbott's cocktail bitters
20ml water
1 orange wedge
2 cloves
2 slices of ginger
a fingernail of butter

Combine all ingredients in a pan over a low heat, stirring until warmed through. Ladle into a beer mug or brandy balloon and garnish with an orange wedge and a cinnamon stick.
