Mince Pie Old Fashioned

We'd recommend leaving one of these out for Father Christmas - although you may worry about the ice melting before he gets to your house, I understand elf magic can take care of that and ensure the drink stays at ideal drinking temperature and dilution until the man himself comes down your chimney.

If you're making one for Father Christmas though, you may as well mix one up for yourself as well, and while you could make a similar drink with the mince pie brandy, this recipe with a mince pie syrup is a simple alternative.

Mince Pie Old Fashioned

60ml blended whisky
barspoon mince pie syrup
three dashes bitters
barspoon water

Add the mince pie syrup, three dashes of bitters and a barspoon of water to a mixing glass. Stir to combine. Add a handful of cubed ice and 30ml whisky and stir well. Add a second handful of ice and the remaining whisky and stir again. Strain into a chilled old fashioned glass over fresh ice.

Mince Pie Syrup - Warm 500ml water and 500g sugar in a pan over a low heat, stirring until the sugar has dissolved. Add 200g mincemeat, bring to the boil and then turn off the heat. Allow the mixture to cool and then strain into a sterile bottle. Keep (in the fridge) for two weeks.
