A smoky sour made with mezcal, but given a touch of Christmas spirit through the use of Calvados and a homemade blood orange cordial.

You might be forgiven for thinking of mezcal as a summer spirit, what with its Mexican roots and familiarity with lime and summer flavours, but of course the spiced, smoky notes and occasional flashes of a pine-like flavour also make it completely Christmas-appropriate.

This recipe ramps up the festive feels by using Calvados (French apple brandy) and a homemade blood orange cordial - bringing a soft appley spice and a hint of citrus.

Falconry Demonstration

30ml mezcal
30ml blood orange cordial
30ml fresh lime juice
15ml Calvados
barspoon Maraschino
barspoon simple syrup
egg white (optional)
3 dashes orange bitters

Combine all ingredients except bitters in a shaker and shake without ice to aerate egg white. Add cubed ice and shake again to chill and dilute. Strain into a chilled coupe and garnish with orange bitters.

Blood Orange Cordial -Combine the zest and juice of six blood oranges with an equal volume of sugar and stir until the sugar is dissolved. Rest in the fridge overnight and then strain. Keep (in the fridge) for up to one week.
