A warming alternative to the welcoming glass of fizz for a wedding reception at a royal palace.

This December we were asked to provide a hot welcome drink that offered something a little bit different from the usual mulled wine option.

The wedding reception was being held in the fifteenth century great hall of a former royal residence, so the grand surroundings seemed to call for a suitably medieval recipe – particularly one which included some festive spices appropriate to the season.

We prepared a range of warming winter punches for a pre-wedding tasting session and the bride and groom left happy with the final recipe:

Hot Buttered Cyser: 20ml applejack, 70ml mead, 70ml cider, 15ml spiced simple syrup, 10ml fresh lemon juice, 2 dashes Abbot’s bitters, 20ml water, 1 orange wedge, 2 cloves, 2 slices of ginger and a fingernail of butter per serving.  Serve warm.
